Inpsired by the wine industry, this particular coffee has gone through a Mosto washed process, whereby the cherries were anaerobically fermented with Mosto and special strains of yeast from the same terroir before the washing process. Mosto is the juice from previous fermentation of the same coffee cherries and re-introduced into the fermentation.
